Can honey be used to replace cane sugar as a sweetening agent ?
Chef Anna Olson says:
I often use honey in place of granulated sugar in baking using the follwoing guidelines:
- Reduce the amount of honey by 25%. If the recipe calls for 1 cup of sugar, use 3/4 cup honey instead.
- Reduce theoven temperature by 10 deg. C so that the surface of your cake, cookie or tart doesn't burn.
